Ingredients
  

Main Ingredients

  • 3 small zucchini or 2 large, sliced into sticks
  • 1 cup panko crumbs gluten-free if needed
  • 0.5 cup grated parmesan cheese
  • 2 Tbsp Italian seasoning
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 cup flour use almond flour for low-carb option
  • 2 eggs
  • 1 Tbsp water
  • olive oil spray for crisping and coating

Instructions
 

  • Slice the zucchini into even sticks and pat dry with paper towels.
  • Add flour and zucchini to a zip-top bag and shake to coat.
  • In one bowl, whisk the eggs with water. In another, mix panko, parmesan, Italian seasoning, garlic powder, and salt.
  • Dip zucchini sticks into the egg mixture, then coat in the breadcrumb mixture.
  • Spray the air fryer basket with olive oil. Arrange the fries in a single layer with space between.
  • Spray the tops with olive oil and air fry at 350°F for 7 to 12 minutes until golden and crispy.

Notes

For extra crispness, cook in batches and avoid overcrowding the basket. These zucchini fries pair well with marinara, ranch, or garlic aioli.
