Main Ingredients
- 2 lbs Beef chuck or stew meat cut into 2-inch pieces
- 2 Yellow onions diced
- 4 Carrots julienned
- 0.5 cup Canola oil
- 3 cups Jasmine rice rinsed
- 4 cups Water or beef broth
- 1 head Garlic sliced crosswise
Spices
- 1 tsp Ground coriander
- 1 tsp Ground cumin
- 2 tsp Lawry’s Seasoned Salt or 1 tsp salt and 1 tsp paprika
- 1.5 tsp Salt
- 0.5 tsp Black pepper
- 1 tsp Paprika
Heat a large Dutch oven over medium heat. Sear the beef until browned on all sides.
Add 4 cups of water. Bring to a boil, then lower the heat, cover, and simmer for 1 hour.
Remove beef with a slotted spoon. Pour the broth into a measuring cup. Add water if needed to reach 4 cups.
Wipe the pot clean. Add oil and sauté onions and carrots for about 15 minutes.
Return beef to the pot. Stir in spices.
Rinse rice and layer over the meat. Place halved garlic head on top.
Gently pour broth over the rice without stirring. Bring to a boil, then cover and simmer for 30 minutes.
Remove from heat and let rest covered for 10 minutes before serving.
Use long-grain rice to prevent sticking. Adjust water slightly if using different rice types. For a vegetarian version, replace meat with chickpeas and use vegetable broth.
