Ingredients
  

  • 2 chicken breasts cut into 1-inch cubes
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce or tamari for gluten-free
  • Juice of 1 lime
  • Wooden skewers soaked in water for 30 minutes

Instructions
 

  • In a bowl, whisk together peanut butter, sriracha, honey, garlic, soy sauce, and lime juice to make the marinade.
  • Toss chicken cubes in half the marinade and refrigerate for 30 minutes to 4 hours.
  • Thread chicken pieces onto soaked wooden skewers.
  • Cook in air fryer at 400°F (200°C) for 10-12 minutes, turning halfway; or bake in oven at 425°F (220°C) for 15-18 minutes, flipping once.
  • Brush skewers with remaining marinade in last 5 minutes of cooking.
  • Ensure chicken is cooked through (internal temperature 165°F/74°C), then let rest 3-5 minutes before serving.
