Ingredients
  

Chicken Marinade

  • 12 ounces boneless skinless chicken breast or thighs thinly sliced
  • 3 tablespoons water
  • 1 teaspoon cornstarch
  • 1 teaspoon neutral oil such as vegetable or avocado oil
  • 2 teaspoons oyster sauce
  • 0.5 teaspoon coarsely ground black pepper

Sauce

  • 0.5 cup low-sodium chicken stock
  • 1 tablespoon oyster sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon sugar
  • 2 teaspoons dark soy sauce
  • 0.5 teaspoon sesame oil

Stir-Fry

  • 3 tablespoons neutral oil divided
  • 2 cloves garlic finely chopped
  • 1 medium onion cut into wedges
  • 0.5 bell pepper cut into bite-sized pieces
  • 1 stalk celery thinly sliced
  • 1 teaspoon coarsely ground black pepper
  • 1.5 teaspoons cornstarch mixed with 2 tablespoons water

Instructions
 

  • Marinate the chicken by mixing it with water, cornstarch, oil, oyster sauce, and black pepper. Let it sit for 10 to 15 minutes.
  • In a separate bowl, combine chicken stock, oyster sauce, light soy sauce, sugar, dark soy sauce, and sesame oil to make the sauce.
  • Heat 2 tablespoons of oil in a wok. Add the marinated chicken and sear until opaque. Remove from the pan and set aside.
  • Add the remaining tablespoon of oil to the wok. Stir-fry garlic and onion for 20 seconds. Add bell pepper, celery, and black pepper. Cook for another 30 seconds.
  • Pour in the sauce mixture and bring it to a simmer. Stir in the cornstarch slurry to thicken.
  • Return the chicken to the wok and stir until everything is coated and heated through.

Notes

If the sauce is too thick, add a splash of water. For a stronger color, use more dark soy sauce. Serve hot over rice.
