- 3 boneless, skinless chicken breasts about 1.5 pounds
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Flatbread Base
- 4 naan or artisan flatbreads
- 1 cup Caesar dressing store bought or homemade
- 1 cup freshly grated Parmesan cheese
- 4 cups romaine lettuce, chopped

- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1 teaspoon fresh lemon juice for finishing
1. Cook the chicken: Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and garlic powder. Cook for 6 to 7 minutes per side until the internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes before slicing thinly.
2. Pre crisp the flatbread: Preheat oven to 400°F. Place flatbreads on a baking sheet and bake for 3 to 4 minutes until lightly crisp but not browned.
3. Assemble: Spread a thin layer of Caesar dressing over each flatbread. Top with sliced chicken and sprinkle evenly with Parmesan cheese.
4. Bake: Return assembled flatbreads to the oven and bake for 8 to 10 minutes until edges are golden and cheese is slightly melted.
5. Finish and serve: Remove from oven and let cool for 2 minutes. Top with chopped romaine and a drizzle of additional Caesar dressing. Add lemon juice if desired. Slice and serve immediately.
For extra crisp edges, increase oven temperature to 425°F for the final 3 minutes. To meal prep, cook and slice the chicken ahead of time and store separately. Add lettuce only after reheating to maintain texture. For a lighter version, use whole wheat flatbread and Greek yogurt based Caesar dressing.
