Ingredients
  

  • 2 large boneless skinless chicken breasts (pounded thin)
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder optional
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 cup marinara sauce homemade or store-bought
  • 2 tbsp olive oil for frying or brushing if air frying
  • 2 –4 ciabatta bread rolls toasted
  • Fresh basil or arugula optional, for garnish
  • Optional: garlic butter or roasted red peppers for sandwich enhancements

Instructions
 

Prepare Chicken:

  • Pound chicken breasts to an even thickness (about ½ inch) for even cooking.

Set Up Breading Stations:

  • Place flour in one shallow dish.
  • Beat eggs in a second dish.
  • Mix panko breadcrumbs with Italian seasoning and garlic powder (if using) in a third dish.

Bread the Chicken:

  • Coat each chicken breast first in flour, then dip into beaten eggs, and finally coat with seasoned breadcrumbs.

Cook the Chicken:

  • Pan-Fry: Heat olive oil in skillet over medium-high heat. Fry chicken about 3–4 minutes per side until golden and cooked through.
  • Air Fryer: Lightly spray chicken with olive oil. Air fry at 375°F (190°C) for 10–12 minutes, flipping halfway.

Bake with Sauce and Cheese:

  • Place cooked chicken on a baking tray. Top with marinara sauce, mozzarella, and parmesan cheese. Bake at 375°F (190°C) for 10–12 minutes until cheese melts and bubbles.

Assemble the Sandwich:

  • Toast ciabatta rolls. Layer bottom half with chicken cutlet, extra marinara sauce, cheese, and optional basil or arugula. Close sandwich, press gently, and serve.
