- 2 large boneless skinless chicken breasts (pounded thin)
- ½ cup all-purpose flour
- 2 large eggs beaten
- 1 cup panko breadcrumbs
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder optional
- 1 cup shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 1 cup marinara sauce homemade or store-bought
- 2 tbsp olive oil for frying or brushing if air frying
- 2 –4 ciabatta bread rolls toasted
- Fresh basil or arugula optional, for garnish
- Optional: garlic butter or roasted red peppers for sandwich enhancements
Set Up Breading Stations:
Place flour in one shallow dish.
Beat eggs in a second dish.
Mix panko breadcrumbs with Italian seasoning and garlic powder (if using) in a third dish.
Cook the Chicken:
Pan-Fry: Heat olive oil in skillet over medium-high heat. Fry chicken about 3–4 minutes per side until golden and cooked through.
Air Fryer: Lightly spray chicken with olive oil. Air fry at 375°F (190°C) for 10–12 minutes, flipping halfway.
