For the Muffins:
- 1 loaf brioche or challah bread about 16oz, cut into 1-inch cubes (day-old works best)
- 6 large eggs
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/3 cup brown sugar packed
- 2 teaspoons vanilla extract
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter melted
For the Cinnamon Sugar Coating:
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
- 1/4 cup unsalted butter melted
Prepare the bread:
Cut your brioche or challah into 1-inch cubes. If your bread is fresh, spread the cubes on a baking sheet and let them dry out for about 30 minutes at room temperature, or place in a 250°F oven for 10 minutes.
Make the custard mixture:
In a large bowl, whisk together eggs, milk, heavy cream, brown sugar, vanilla extract, cinnamon, and salt until well combined and slightly frothy.

Finish the muffins:
Allow the muffins to cool in the tin for 5 minutes. Then, carefully remove each muffin, brush the tops and sides with melted butter, and roll in the cinnamon sugar mixture until fully coated.
