  • 4 pieces Chicken Breasts Boneless, skinless
  • 1 can Coconut Milk Full-fat for creamier texture
  • 2 tbsp Lime Juice Freshly squeezed
  • 1 tbsp Lime Zest For added flavor
  • 2 cloves Garlic Minced
  • 1 inch Ginger Fresh, minced
  • 1 tsp Chili Flakes Optional for spice
  • 2 tbsp Coconut Oil For cooking
  • 1 cup Cilantro Fresh, for garnish

Instructions
 

  • 1. Heat coconut oil in a skillet over medium heat. Add chicken breasts and cook until golden brown on both sides, about 6-7 minutes per side. Remove from the skillet and set aside.
  • 2. In the same skillet, add garlic, ginger, and chili flakes. Sauté for 1 minute until fragrant.
  • 3. Pour in the coconut milk and stir, scraping up any browned bits from the skillet. Let it simmer for 3-5 minutes until it thickens slightly.
  • 4. Add lime juice and lime zest to the skillet, stirring to combine. Return the chicken to the skillet and coat with the sauce. Let it simmer for another 5-7 minutes, or until the chicken is fully cooked.
  • 5. Garnish with fresh cilantro and serve with rice, pasta, or vegetables.
