Ingredients
  

Beef Filling

  • 1 pound ground beef 85 to 93 percent lean
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce

Quesadilla Assembly

  • 4 large flour tortillas burrito size
  • 2 cups shredded cheddar cheese or Colby Jack
  • 0.5 cup diced onion
  • 0.5 cup chopped dill pickles
  • 1 tablespoon olive oil for cooking

Optional Burger Sauce

  • 0.5 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 1 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • 1 tablespoon finely grated onion
  • 0.25 teaspoon paprika

Instructions
 

  • Heat a large skillet over medium high heat. Add the ground beef and cook for 5 to 7 minutes, breaking it into small crumbles until fully browned. Drain excess grease. Stir in salt, pepper, garlic powder, and Worcestershire sauce. Cook for 1 to 2 minutes more, then remove from heat.
  • Lay each tortilla flat. Sprinkle cheese over half of each tortilla. Add a portion of the seasoned beef, then top with diced onion and chopped pickles. Finish with another light layer of cheese and fold the tortilla over.
  • Heat olive oil in the skillet over medium heat. Cook each quesadilla for 2 to 3 minutes per side until golden brown and crisp and the cheese is melted. Avoid overcrowding the pan.
  • Let the quesadillas rest for 1 to 2 minutes before slicing. Serve warm with the optional burger sauce.

Notes

For a lighter version, use 93 percent lean ground beef or ground turkey and reduced fat cheese. To make a Big Mac style variation, add shredded lettuce after cooking and use American cheese with the burger sauce. Reheat leftovers in a skillet for best crisp texture.
