Ingredients
  

  • 2 Delmonico steaks 1 to 1.5 inches thick
  • 2 tbsp olive oil
  • 1 tsp coarse salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp unsalted butter
  • 2 garlic cloves smashed
  • 2 sprigs fresh rosemary or thyme

Instructions
 

Prepare the Steak:

  • Pat the steaks dry with a paper towel. Rub with olive oil, salt, and black pepper on both sides. Let them rest at room temperature for 30 minutes.

Heat the Pan:

  • Preheat a cast-iron skillet over medium-high heat until smoking hot.

Sear the Steaks:

  • Place the steaks in the hot skillet. Sear for 3-4 minutes per side until a deep brown crust forms.

Add Butter and Aromatics:

  • Reduce heat to medium-low, add butter, garlic, and rosemary. Tilt the pan and spoon the melted butter over the steaks for 1-2 minutes.

Check Doneness:

  • Use a meat thermometer to check the internal temperature
  • Rare: 120°F (49°C)
  • Medium-Rare: 130°F (54°C)
  • Medium: 140°F (60°C)

Rest the Steak:

  • Remove from the pan and let the steak rest for 5-10 minutes to retain juices.

Serve:

  • Slice against the grain and enjoy with your favorite sides!
