Ingredients
  

  • 2 large eggs
  • 2 flour tortillas
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 1 tablespoon butter or oil for cooking
  • Salt and pepper to taste
  • Salsa optional, for serving
  • Guacamole optional, for serving

Instructions
 

Prepare the pan:

  • Heat a non-stick skillet over medium heat and melt the butter or heat the oil.

Cook the eggs:

  • Crack the eggs into the pan, season with salt and pepper, and cook until the yolk is slightly set, about 2-3 minutes. For a firmer yolk, cook a bit longer.

Assemble the quesadilla:

  • Place a tortilla in the pan and sprinkle half of the cheese on top. Add the fried egg, then top with the remaining cheese and the second tortilla.

Cook the quesadilla:

  • Press gently with a spatula and cook for 2-3 minutes until the bottom tortilla is golden brown and crispy. Flip the quesadilla and cook for another 2 minutes, or until the cheese has melted and the tortilla is crispy.

Serve:

  • Remove from the pan, slice into wedges, and serve with salsa and guacamole if desired. Enjoy!
