Main Ingredients
- 2 chicken breasts cubed
- 4–5 small to medium potatoes peeled and cubed
- 2 tablespoons butter
- 1 cup shredded mozzarella cheese
Seasonings
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt divided
- 1/2 teaspoon black pepper divided
Sauce
- 2 tablespoons minced garlic
- 1/2 cup Buffalo Wild Wings Garlic Parmesan Sauce adjust to taste
- olive oil for tossing potatoes
Peel and cube the potatoes evenly. Toss with olive oil, salt, pepper, garlic powder, and paprika.
Air fry at 400°F for 20 minutes, shaking halfway. Alternatively, roast in the oven at 400°F for 25–30 minutes.
Cut chicken into cubes and season with salt, pepper, paprika, onion powder, and Italian seasoning.
Melt butter in a skillet over medium high heat. Add chicken and cook for 6–8 minutes until golden and cooked through.
Add minced garlic to the skillet and sauté for 1–2 minutes. Pour in the garlic Parmesan sauce and stir to coat.
Add cooked potatoes to the skillet and combine gently. Top with shredded mozzarella and cover until melted, or broil for a golden finish.
For extra flavor, sprinkle grated Parmesan or fresh parsley before serving. You can also swap the sauce with a homemade garlic cream version if preferred.
