Ingredients
  

  • 2 cups cooked rice preferably day-old
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 bell pepper diced
  • 1 zucchini diced
  • 1/2 cup peas fresh or frozen
  • 2 cloves garlic minced
  • 1/4 cup mozzarella cheese shredded
  • 2 tablespoons fresh basil chopped
  • Salt and pepper to taste

Instructions
 

Prepare the rice:

  • If using fresh rice, allow it to cool completely. Day-old rice works best for frying because it’s less sticky and absorbs flavors better.

Cook the vegetables:

  • Heat olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and zucchini. Sauté for about 3-4 minutes until the vegetables are tender.

Add the garlic and peas:

  • Stir in the minced garlic and peas. Cook for another 1-2 minutes until fragrant and the peas are tender.

Fry the rice:

  • Add the cooked rice to the skillet, breaking it up with a spatula. Stir well to combine the rice with the vegetables, allowing it to fry for 5-6 minutes. Stir occasionally to ensure it doesn’t burn.

Add mozzarella and basil:

  • Sprinkle the shredded mozzarella cheese over the rice, allowing it to melt into the rice. Stir in the chopped fresh basil and season with salt and pepper to taste.

Serve:

  • Once the cheese has melted and everything is well-combined, remove from heat. Serve warm and enjoy!
