Ingredients
  

For the Salad:

  • 1 head romaine lettuce chopped
  • ¼ cup cotija cheese crumbled
  • 1 avocado diced
  • 1 jalapeño chopped (optional for heat)
  • 2 tbsp lime juice fresh-squeezed
  • 2 tbsp cilantro chopped
  • ½ cup tortilla strips

For the Dressing:

  • ½ cup Greek yogurt or vegan mayo for dairy-free option
  • 1 –2 chipotle peppers in adobo sauce
  • 2 tbsp lime juice fresh-squeezed
  • 1 clove garlic
  • 2 tbsp fresh cilantro
  • 2 tbsp cotija cheese
  • 2 tbsp olive oil
  • Salt to taste

Instructions
 

Wash and Prep Romaine:

  • Rinse the romaine lettuce thoroughly. Dry using a salad spinner. Chop into bite-sized pieces and set aside in a large salad bowl.

Blend the Dressing:

  • Add all dressing ingredients (Greek yogurt or vegan mayo, chipotle peppers, lime juice, garlic, cilantro, cotija, olive oil, salt) into a blender or food processor. Blend until smooth and creamy.

Toss the Salad:

  • Pour the dressing over the romaine. Add avocado, jalapeño (if using), cotija, and cilantro. Gently toss to coat without bruising the lettuce.

Top and Serve:
