Ingredients
  

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup mashed ripe bananas about 2 to 3 medium bananas
  • 1/2 cup sour cream

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats blended into oat flour
  • 1 teaspoon baking soda
  • 1.5 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon optional
  • 1/8 teaspoon ground nutmeg optional
  • 1/8 teaspoon ground cloves optional

Optional Add-Ins

  • 1/2 to 3/4 cup chopped nuts such as walnuts or pecans

Instructions
 

  • Preheat the oven to 350°F. Line or grease a 9x5 inch loaf pan.
  • Toast nuts if using. Spread on a baking sheet and bake for 5 to 7 minutes until fragrant.
  • In a large bowl, beat butter, brown sugar, and granulated sugar until creamy.
  • Add eggs and vanilla. Beat until smooth.
  • Stir in mashed bananas.
  • In a separate bowl, combine flour, blended oats, baking soda, baking powder, salt, and spices.
  • Fold the dry ingredients into the wet mixture gently.
  • Stir in sour cream until just combined.
  • Fold in nuts or other add-ins if using.
  • Pour batter into prepared pan and smooth the top.
  • Bake for 55 to 65 minutes. A toothpick should come out clean or with moist crumbs.
  • Cool in the pan for 20 minutes before slicing.

Notes

Use very ripe bananas for best flavor. You can freeze banana bread in slices or as a full loaf. Thaw at room temperature and toast lightly for best texture after freezing.
