Chicken and Rice
- 1 lb Boneless skinless chicken thighs or breasts
- 1 cup Long grain white rice uncooked
- 2 cups Chicken broth
Honey BBQ Sauce
- 1/2 cup BBQ sauce use mild or smoky
- 1/4 cup Honey
Seasonings and Vegetables
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1/2 tsp Smoked paprika
- to taste Salt and black pepper
- 1 cup Mixed vegetables frozen or fresh
- 2 tbsp Chopped green onions or parsley optional garnish
Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat a large deep skillet over medium heat and sear the chicken for 4 to 5 minutes per side until golden brown.
In a mixing bowl, stir together the BBQ sauce and honey until smooth. Pour the mixture over the seared chicken and let it simmer for 1 minute.
Add the uncooked rice to the skillet and pour in the chicken broth. Gently press the rice into the liquid so it is mostly submerged.
Bring to a light simmer, cover with a lid, and reduce heat to low. Cook for 18 to 22 minutes until the rice is tender and most of the liquid is absorbed.
During the last 5 minutes of cooking, add the mixed vegetables on top. Cover again and allow them to steam until heated through.
Remove from heat and let rest, covered, for 5 minutes. Fluff the rice with a fork, garnish with green onions or parsley, and serve warm.
For best results, use long grain white rice and avoid lifting the lid while cooking. To reduce sugar, decrease the honey slightly or choose a lower sugar BBQ sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
