Ingredients
  

Gelatin Base

  • 1 box (3 oz) orange gelatin mix
  • 1 cup boiling water
  • 1/2 cup cold water

Creamy Mixture

  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 tub (8 oz) whipped topping thawed

Add Ins

  • 1 can (28 oz) mandarin oranges well drained
  • 2 cups mini marshmallows

Instructions
 

  • In a large mixing bowl, whisk together the boiling water and orange gelatin mix until completely dissolved. Stir in the cold water and refrigerate for 10 to 15 minutes until slightly thickened but not set.
  • Whisk in the instant vanilla pudding mix until smooth and fully combined. Return the bowl to the refrigerator for another 15 minutes to thicken.
  • Gently fold in the thawed whipped topping using a rubber spatula. Mix slowly to maintain a light and fluffy texture.
  • Fold in the well drained mandarin oranges and mini marshmallows. Stir carefully so the oranges remain intact.
  • Cover and refrigerate for at least 2 hours before serving. Stir gently before serving if needed.

Notes

Drain the mandarin oranges thoroughly to prevent excess liquid from thinning the salad. For a lighter version, use sugar free gelatin, sugar free pudding, and light whipped topping. This dessert can be made one day in advance and stored in an airtight container in the refrigerator for up to 3 days.
