Ingredients
  

Puff Pastry Layers

  • 1 sheet Puff pastry Thawed but still cold
  • 2 tablespoons Granulated sugar For sprinkling

Vanilla Cream Filling

  • 1 cup Heavy cream Chilled
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Pure vanilla extract
  • 1 tablespoon Mascarpone cheese Optional, for stability

Garnish

  • 1 pint Fresh raspberries
  • Powdered sugar For dusting
  • Fresh mint leaves Optional

Instructions
 

  • 1. Prepare the pastry: Preheat oven to 400°F (200°C). Roll puff pastry to about 1/8 inch thickness. Cut into rectangles approximately 1 by 2 inches. Place on a parchment lined baking sheet and prick each piece with a fork to prevent excessive puffing. Sprinkle lightly with granulated sugar.
    2. Bake: Bake for 10 to 12 minutes or until deep golden and crisp. Cool completely on a wire rack before assembling.
    3. Make the cream: In a chilled bowl, beat heavy cream, powdered sugar, vanilla extract, and mascarpone until soft peaks form. Do not overbeat.
    4. Assemble: Place one pastry rectangle on a flat surface. Pipe or spoon a layer of cream and add small pieces of raspberry. Top with another pastry layer and repeat. Finish with a third pastry layer, a small dollop of cream, and one whole raspberry. Dust with powdered sugar just before serving.

Notes

For best texture, assemble the cookies within a few hours of serving to keep the pastry crisp. For added stability at events, brush a thin layer of melted white chocolate on the inside of each pastry layer before filling. For a lighter version, replace half of the whipped cream with thick Greek yogurt.
