Ingredients
  

Shortbread Crust

  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour spooned and leveled

Apple Filling

  • 2 large apples peeled and thinly sliced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg

Streusel Topping

  • 1/2 cup rolled oats
  • 1/3 cup light or dark brown sugar packed
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup all-purpose flour spooned and leveled
  • 1/4 cup unsalted butter cold and cubed

Topping

  • salted caramel sauce homemade or store-bought, for drizzling

Instructions
 

  • Preheat oven to 300°F (149°C). Line an 8-inch square baking pan with parchment paper. Set aside.
  • In a bowl, mix melted butter, sugar, vanilla, and salt. Stir in flour until combined. Press into the pan. Bake for 15 minutes.
  • Toss sliced apples with flour, sugar, cinnamon, and nutmeg. Set aside.
  • Combine oats, brown sugar, cinnamon, and flour. Cut in cold butter until mixture forms coarse crumbs.
  • Increase oven to 350°F (177°C). Layer apples tightly on the warm crust. Sprinkle with streusel topping.
  • Bake for 30 to 35 minutes until topping is golden. Cool for 20 minutes, then chill for 2 hours.
  • Lift bars out using parchment. Slice and drizzle with salted caramel before serving.

Notes

These bars are even better the next day. You can freeze them for up to 3 months. Thaw overnight before serving and drizzle caramel just before eating.
