Shortbread Crust
- 1/2 cup unsalted butter melted
- 1/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1 cup all-purpose flour spooned and leveled
Apple Filling
- 2 large apples peeled and thinly sliced
- 2 tablespoons all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
Streusel Topping
- 1/2 cup rolled oats
- 1/3 cup light or dark brown sugar packed
- 1/4 teaspoon ground cinnamon
- 1/4 cup all-purpose flour spooned and leveled
- 1/4 cup unsalted butter cold and cubed
Topping
- salted caramel sauce homemade or store-bought, for drizzling
Preheat oven to 300°F (149°C). Line an 8-inch square baking pan with parchment paper. Set aside.
In a bowl, mix melted butter, sugar, vanilla, and salt. Stir in flour until combined. Press into the pan. Bake for 15 minutes.
Toss sliced apples with flour, sugar, cinnamon, and nutmeg. Set aside.
Combine oats, brown sugar, cinnamon, and flour. Cut in cold butter until mixture forms coarse crumbs.
Increase oven to 350°F (177°C). Layer apples tightly on the warm crust. Sprinkle with streusel topping.
Bake for 30 to 35 minutes until topping is golden. Cool for 20 minutes, then chill for 2 hours.
Lift bars out using parchment. Slice and drizzle with salted caramel before serving.
These bars are even better the next day. You can freeze them for up to 3 months. Thaw overnight before serving and drizzle caramel just before eating.
