Equipment

  • Mini Muffin Pan
  • Skillet
  • Large mixing bowl
  • Measuring cups and spoons
  • Kitchen Towel
  • Spatula

Ingredients

Sausage Hashbrown Bites

  • 1 pound Turkey breakfast sausage Mild or spicy
  • 3 cups Frozen shredded hash browns Thawed and squeezed dry
  • 1 1/2 cups Sharp cheddar cheese Shredded
  • 2 large Eggs Beaten
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Paprika Optional
  • As needed Cooking spray or oil For greasing the mini muffin pan

Instructions

  • Preheat the oven to 375°F. Lightly grease a 24 cup mini muffin pan with cooking spray or oil.
  • Cook the turkey breakfast sausage in a skillet over medium heat for 8 to 10 minutes, breaking it into small crumbles and stirring occasionally. Cook until browned and the internal temperature reaches 165°F. Drain excess liquid or fat and let the sausage cool slightly.
  • Thaw the hash browns completely. Place them in a clean kitchen towel and squeeze out excess moisture.
  • In a large bowl, combine the cooked sausage, hash browns, cheddar cheese, beaten eggs, garlic powder, black pepper, and paprika if using. Stir until evenly combined.
  • Spoon the mixture into the prepared mini muffin cups. Fill each cup generously and press gently so the mixture holds together.
  • Bake for 22 to 27 minutes, until the tops are golden brown and the centers are set. Let the bites rest in the pan for about 5 minutes before removing.
  • Serve warm with ranch dressing, spicy ketchup, or your favorite dipping sauce.

Notes

Tips: Squeeze the thawed hash browns thoroughly to help the bites brown and hold together. Freshly shredded cheddar mixes well. Allow the bites to rest briefly before removing them from the pan.
Storage: Refrigerate leftovers in an airtight container for up to 4 days. Freeze baked and cooled bites for 2 to 3 months. Reheat in a 350°F oven for 8 to 12 minutes or in an air fryer at 325°F for 4 to 6 minutes. Reheat leftovers to 165°F.
