- 1 lb shrimp peeled and deveined
- 1/2 lb Andouille sausage sliced
- 1 cup long-grain white rice
- 2 cups chicken broth or vegetable broth for a lighter version
- 1 medium onion diced
- 1 bell pepper diced
- 2 celery stalks diced
- 2 cloves garlic minced
- 1 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- 1/4 tsp thyme
- 1/4 tsp oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 tbsp butter optional
- Fresh parsley for garnish
Sauté the Vegetables:
In the same skillet, add a little more olive oil if needed. Sauté the onion, bell pepper, celery, and garlic for 3-4 minutes until softened.
Add the Rice and Spices:
Stir in the rice, Cajun seasoning, paprika, thyme, and oregano. Let it cook for 1-2 minutes to toast the rice slightly, then add the chicken broth. Stir to combine.
