Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 1/2 lb Andouille sausage sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth or vegetable broth for a lighter version
  • 1 medium onion diced
  • 1 bell pepper diced
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp thyme
  • 1/4 tsp oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp butter optional
  • Fresh parsley for garnish

Instructions
 

Prepare the Ingredients:

  • Dice the onion, bell pepper, and celery. Mince the garlic. Slice the Andouille sausage and set the shrimp aside.

Cook the Sausage:

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sausage and cook for 4-5 minutes, stirring occasionally, until browned. Remove the sausage and set aside.

Sauté the Vegetables:

  • In the same skillet, add a little more olive oil if needed. Sauté the onion, bell pepper, celery, and garlic for 3-4 minutes until softened.

Add the Rice and Spices:

  • Stir in the rice, Cajun seasoning, paprika, thyme, and oregano. Let it cook for 1-2 minutes to toast the rice slightly, then add the chicken broth. Stir to combine.

Simmer the Rice:

  • Bring the broth to a simmer. Cover the skillet and cook the rice for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

Add Shrimp and Sausage:

  • Stir in the cooked sausage and shrimp. Cover and cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

Finish and Serve:

  • Stir in the butter (if using) and adjust the seasoning with salt and pepper to taste. Garnish with fresh parsley and serve.
