- 1 lb Shrimp peeled and deveined
- 1 tablespoon Olive Oil
- 1 tablespoon Taco Seasoning
- 1 tablespoon Lime Juice freshly squeezed
- 1/2 teaspoon Salt
- 1/2 cup Greek Yogurt or sour cream
- 3 tablespoons Salsa
- 1/2 teaspoon Cumin
- 1/4 teaspoon Pepper
- 4 cups Romaine Lettuce chopped
- 1 cup Cherry Tomatoes halved
- 1/2 cup Black Beans rinsed and drained
- 1/2 cup Corn fresh or canned
- 1/4 cup Red Onion finely diced
- 1 Avocado sliced
- 2 tablespoons Cilantro chopped
- Optional Toppings: Tortilla chips Cotija cheese, JalapeƱos
Season and Cook the Shrimp
Pat the shrimp dry with a paper towel to ensure a good sear.
Toss shrimp in a bowl with olive oil, taco seasoning, salt, and lime juice.
Heat a large skillet over medium-high heat. Once hot, add the shrimp in a single layer.
Cook for 2-3 minutes per side until the shrimp are pink and opaque. Avoid overcooking to keep them tender.
Remove shrimp from heat and set aside.
Prepare the Dressing
In a small bowl, whisk together Greek yogurt (or sour cream), salsa, lime juice, cumin, salt, and pepper until smooth.
Adjust seasoning as needed, and add a splash of water or extra lime juice if you prefer a thinner dressing.
Assemble the Salad
In a large bowl, combine chopped romaine lettuce, halved cherry tomatoes, black beans, corn, diced red onion, sliced avocado, and cilantro.
Toss gently to mix all the ingredients together.
Add the Shrimp and Dressing
Arrange the cooked shrimp on top of the salad.
Drizzle the creamy lime dressing evenly over the salad.
