Ingredients
  

  • 2 cups basmati rice soaked for 30 minutes
  • 1 kg chicken lamb, or fish
  • 2 large onions thinly sliced
  • 2 medium tomatoes finely chopped
  • 2 tbsp baharat spice mix
  • 2-3 dried black limes loomi, with holes poked
  • 2 tbsp garlic & ginger minced
  • 1 tsp turmeric
  • 4 cups water or broth
  • 2 tbsp cooking oil
  • Salt to taste
  • Fried onions & nuts for garnish

Instructions
 

Sauté Aromatics

  • Heat oil in a large pot. Add sliced onions and cook until golden brown. Stir in minced garlic and ginger until fragrant.

Cook the Protein

  • Add chicken, lamb, or fish, and cook until lightly browned.

Build the Flavor

  • Stir in chopped tomatoes, baharat spice mix, turmeric, and salt. Pour in water or broth, then bring to a rolling boil.

Add the Rice

  • Drain the soaked rice and add it to the pot. Place the dried black limes on top.

Simmer & Cook

  • Cover and reduce heat to low. Let it simmer until the rice is tender and has absorbed the flavors.

Serve

  • Fluff the rice, garnish with fried onions and nuts, and enjoy!
