- 4 large potatoes peeled and diced
- 1 small onion diced
- 2 stalks celery diced
- 1 green bell pepper diced
- 3 cloves garlic minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Cajun seasoning
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon cayenne pepper optional
- 2 tablespoons butter
- salt and pepper to taste

- 2 tablespoons green onions sliced

In a large pot, melt the butter over medium heat. Add the onion, celery, bell pepper, and garlic. Sauté until vegetables are softened, about 5 minutes.
Add the diced potatoes, chicken broth, Cajun seasoning, smoked paprika, cayenne (if using), salt, and pepper. Bring to a boil, then reduce to a simmer for 20 minutes or until potatoes are tender.
Partially blend the soup using an immersion blender to create a creamy texture while leaving some potato chunks intact. Alternatively, mash a portion of the potatoes with a spoon.
Lower the heat. Stir in the heavy cream and crumbled bacon. Heat through gently without boiling. Adjust seasoning if needed.
Ladle the soup into bowls and garnish with green onions and shredded cheddar cheese if desired. Serve hot.
For a vegetarian version, substitute vegetable broth and skip the bacon. Add mushrooms or corn for extra heartiness. This soup stores well and can be frozen for up to two months.
