Ingredients
  

  • 2 boneless skinless chicken breasts or thighs
  • 3 cups cherry tomatoes diced
  • 1 cup fresh basil leaves chopped
  • 3 cloves garlic minced
  • 3 tablespoons extra virgin olive oil
  • 300 g penne pasta or preferred pasta
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • ½ cup heavy cream optional for creamy version
  • Optional: balsamic glaze for drizzling

Instructions
 

Prepare the Chicken:

  • Season chicken with salt, pepper, and Italian seasoning. Heat 1 tablespoon olive oil in a skillet over medium heat. Cook chicken 6–7 minutes per side until golden and fully cooked. Remove and slice into strips.

Make the Bruschetta Topping:

  • In a bowl, combine diced cherry tomatoes, chopped basil, minced garlic, 2 tablespoons olive oil, and a pinch of salt. Mix well and set aside.

Cook the Pasta:

  • Bring a large pot of salted water to a boil. Add penne pasta and cook according to package instructions until al dente (about 10 minutes). Reserve ½ cup of pasta water before draining.

Combine Pasta and Toppings:

  • Return drained pasta to the pot on low heat. Add bruschetta topping and sliced chicken. Toss gently to combine.

Optional Creamy Finish:

  • For a creamy texture, stir in heavy cream and a splash of reserved pasta water until the sauce coats the pasta.

Add Cheese and Serve:

  • Mix in grated Parmesan cheese. Drizzle with balsamic glaze if desired. Garnish with extra fresh basil. Serve immediately.
