- 4 boneless skinless chicken thighs
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons hot sauce adjust for spice level
- 1 tablespoon soy sauce
- 2 cloves garlic minced
- 1 tablespoon rice vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 2 cups cooked rice or your preferred base like quinoa or cauliflower rice
- 1 cup bell peppers sliced
- 1/2 cup shredded carrots
- 1/4 cup cilantro chopped (optional for garnish)
- Lime wedges optional for garnish
Make the Hot Honey Sauce:
In a small bowl, whisk together honey, hot sauce, soy sauce, rice vinegar, minced garlic, ground ginger, and a pinch of salt and pepper. Set aside.
Combine and Coat:
