Ingredients
  

  • 4 boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons hot sauce adjust for spice level
  • 1 tablespoon soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 cups cooked rice or your preferred base like quinoa or cauliflower rice
  • 1 cup bell peppers sliced
  • 1/2 cup shredded carrots
  • 1/4 cup cilantro chopped (optional for garnish)
  • Lime wedges optional for garnish

Instructions
 

Prepare the Chicken:

  • Season the chicken thighs with salt, pepper, and smoked paprika. Set aside.

Make the Hot Honey Sauce:

  • In a small bowl, whisk together honey, hot sauce, soy sauce, rice vinegar, minced garlic, ground ginger, and a pinch of salt and pepper. Set aside.

Cook the Chicken:

  • Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and cook for about 6-7 minutes per side, or until golden brown and fully cooked through. Remove from skillet and let rest for a few minutes before slicing into strips.

Sauté the Veggies:

  • In the same skillet, add sliced bell peppers and shredded carrots. Sauté for 2-3 minutes until tender but still crisp.

Combine and Coat:

  • Return the sliced chicken to the skillet, pour the hot honey sauce over the chicken and veggies, and toss to coat evenly. Let everything cook together for another 2-3 minutes, allowing the sauce to thicken and caramelize.

Assemble the Bowl:

  • Divide the cooked rice (or grain of choice) into serving bowls. Top with the chicken and veggie mixture.

Garnish and Serve:

  • Garnish with chopped cilantro and a squeeze of lime juice. Serve warm and enjoy!
