Ingredients
  

Pasta and Sauce Ingredients

  • 1 pound large shrimp peeled and deveined
  • 8 ounces pasta spaghetti, fettuccine, or similar
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream or half-and-half
  • 1 cup chicken broth low-sodium or vegetable broth
  • 1 cup Parmesan cheese grated
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • fresh basil or parsley chopped for garnish
  • 2 tablespoons sun dried tomato sauce optional

Instructions
 

  • Boil a large pot of salted water. Cook pasta until al dente. Reserve one cup of pasta water before draining.
  • In a large skillet, heat olive oil over medium. Add shrimp, season with salt and pepper, and sauté 2 to 3 minutes per side. Remove and set aside.
  • In the same skillet, add minced garlic and cook for 30 seconds. Stir in chicken broth and cream. Let simmer gently.
  • Whisk in Parmesan until smooth. Add Italian seasoning. Adjust salt and pepper to taste.
  • Add shrimp and pasta to the skillet. Toss to coat. If needed, add reserved pasta water a little at a time until sauce reaches desired consistency.
  • Serve hot with fresh basil or parsley sprinkled on top.

Notes

For extra flavor, add sun dried tomato sauce to the cream base. To make it lighter, substitute cream with half-and-half or Greek yogurt. This dish reheats well the next day with a splash of broth added in the pan.
